Spinach

choose crisp, dark-green leaves with no yellowibng.  If it is pre-bagged, open immediately and remove and rotted leaves.  Refrigerated for up to 3 days, wrapped loosely in paper towels inside a plastic bag.

Spinach has sand and grit tucked into every nook and cranny.  Fill a sink with cold water and add spinach.  Remove large stems.  Lift out of water and drain the spinach.  Refill sink and repeat.  Dry leaves on paper twoels on in a salad spinner.  Never cook spinach in aluminum pans.  Raw spinach is good in salads by itself or with mixed greens.  Spinahc is best cooked briefly over a high heat and topped with a touch of butter and freshly grated nutmeg.
