choose cabbages that are heavy for hteir size with crisp, tightly packed leaves. Tightly wrap in plastic and store in refrigerator for up to 1 week.
Cabbage steam can have a strong odor. Place a piece of bread, a walnut or sprig of parsely in the cooking water to reduce teh aroma. Cabbage should be cooked until it is just tender. Over cooked cabbge will be soggy and can have a strong, acrid taste.
