Look for brightly colored, plump berries with a strong scent. Small berries are the tastiest. Strawberries fo not ripen after they ahve been picked. Do not wash berries before storing. Place in a single layer on a paper twoel in a moisture-proof container. In the refrigerator, they will last 2 to 3 days.
Rinse berries thoroughly. With a small, sharp knife, remove the hull. To get maximum juice, slice strawberries, sprinkle with sugar and let sit at room temperature for 2 hours. Use strawberries in salads, souffles, breads, preserves, tarts and frozen confections.
