Buying Prepared Hot food

Make sure to keep the hot foods hot. Use them within 2 hours of picking them up. If you will not be using immediately, keep the food HOT, not warm. Food should be kept between 140 degrees and 165 degrees. Cover with foil to keep from drying out. To serve hot foods later, divide into small portions, place in shallow container and refrigerate or freeze. Remove stuffing from whole cooked poultry and refrigerate seperately. To reheat be sure foods are heated through to 165 degrees. Gravy should be brought to a rolling boil. If using a microwave be sure to cover the dish and rotate throughout the heating so foods will heat evenly.
