Portabella mushrooms are large, generally 4 to 6 inches wide.  Their stems are thick and topped by a mottled brown cap with dark-brown gills.  Portabellas are actually matured cremini mushrooms.  They are available year-round.

Choose unbroken portabella mushrooms.  Store ina dish covered with a barely damp paper towels in the refrigerator for up to 3 days.

Portabella stems are woody and should be removed.  Do not discard, buy use to flavor stocks.  Wipe cap with a damp paper towel to remove dirt.  Portabella mushrooms are wonderful when grilled.  Combine salt, pepper, minced garlic and parsley to taste.  Sprinkle over gill side.  Top with 3 tabelspoons of olive oil and grill for 2 to 3 minutes.  Do not overcook.
