Entertaining Safely at Outdoor Parties

Be sure to have a well insulated cooler with plenty of ice or reusable cold packs for refrigeration. Make sure cold foods have been kept at 40 degrees or below. Limit opening and closing of the cooler to retain the cold air. Leave foods in the cooler until right before serving to retain a safe serving temperature. Anything left out of refrigeration for 2 hours should be discarded. If the outside teperature is over 90 degrees it drops to 1 hour. Plan accordingly.
