Bartletts bruise easily. Look for firm, unmarked and unbruised fruit. When ripe, a red Bartlett goes from dark green with reddish blush to a brillant red. They are fragrant and the flesh at the stem yields to gentle pressure. Ripen pears at room temperature in a paper bag with and apple or banan. Store ripe pears in a plastic bag in the refrigerator for up to 5 days.
Bartletts are better eaten out of hand, but can be used in cooked dishes. When heated, pear skin will darken and toughen, so remove before cooking.
