Choose long, narrow carrots for the best taste.  Avoid carrots that are bendable, have cracks or show withering.  If buying carrots with greens attached, remove them before refrigerating the carrots in a plastic bag.  Do not store carrots next to apples.

Although carrots lose some of their vitamins when peeled, they taste better with skins removed. (Baby carrots can be brushed gently and served unpeeled.)  Freshen limp carrots in a bowl of ice water.  Carrots can be shredded, julienned or cut into "coins" and cooked any number of ways.  Try them simmered, then dressed with butter, brown sugar,and red wine vinegar.  Or, puree them with a little orange juice and chicken broth.  Also, add carrots to your stir-fries.
